A pumpkin soup is a great way of dealing with the innards of your jack o’lantern and feeding friends that come round for your Halloween party.
This is a very simple pumpkin soup recipe that takes minutes to prepare.
2 tablespoons of olive oil
1 large onion finely chopped
2 sticks of celery, peeled and finely sliced
3 cloves of garlic, peeled and finely chopped
The scooped out pumpkin flesh, discard the pumpkin seeds and chop roughly
1 to 2 pints of vegetable or chicken stock (depending on the amount of pumpkin you have
100 ml of fresh double cream
Salt and freshly ground black pepper
Put a large saucepan over a medium heat and add the olive oil, onion, garlic and celery and cook until softened.
Then add the pumpkin and cook for a further 5 minutes.
Add the stock, cover the pan with a lid and cook for 15 to 20 minutes. When the pumpkin is cooked (soft) blend the soup till it’s smooth. Add the cream and season with salt and pepper to taste. Your pumpkin soup is now ready.
To serve your pumpkin soup place chopped cubes of gruyere at the bottom of a soup bowl and pour over your soup. Accompany it with hunks of fresh crusty bread.
